I made this one up all on my own. The more times you can whisk it during freezing (to break up the ice crystals) the better it will turn out. I think it goes well with fruit salad (and it's v. healthy!).
Ingredients
Two bunches of bananas, fairtrade if possible
300ml (10fl oz, 1.25 cups) water
300g (12oz) light muscavado sugar
Grated zest and juice of a lemon
Turn the freezer down to the lowest setting and put a pyrex or ceramic dish in it for about an hour (this helps the sorbet to freeze quickly).
In a large bowl, mash the bananas up with the lemon juice and zest.
Meanwhile, put the water and sugar into a saucepan and heat over a gentle heat until the sugar has dissolved (normally about 5mins).
Leave the sugar syrup to cool, and when it has cooled, mix it into the mashed banana, whisking with a fork. Pour into the cold dish and put in the freezer.
When the edges of the sorbet are beginning to freeze (normally after about an hour), take it out of the freezer and give it a good whisk with a fork to break up the ice crystals. Put it back in the freezer and whisk it every half-an-hour or so until it's totally frozen.
