Passionfruit and Malibu sorbet

This is strongly based on Jamie Oliver's Passionfruit and Campari sorbet but I couldn't find any Campari when I made it and used Malibu instead (which seemed to work really well). You can tell a passionfruit is ripe when the skin is really wrinkled.

Ingredients

  1.  Turn the freezer down to the lowest setting and put a pyrex or ceramic dish in it for about an hour (this helps the sorbet to freeze quickly).
  2.  Put the water and sugar into a saucepan and heat over a gentle heat until the sugar has dissolved (normally about 5mins), and then allow it to cool.
  3.  Meanwhile, cut the passionfruit in half and scoop out the flesh into a large bowl, discarding the skins. Sieve out about half or all of the seeds, depending how much crunch you'd like in the sorbet.
  4.  Mix the sugar syrup and malibu into the passionfruit and whisk a little with a fork.
  5.  Pour the mixture into the cold dish and freeze until the sorbet is beginning to freeze around the edge. Whisk it well with a fork to break up the ice crystals and put back in the freezer. Keep whisking it every half-hour or so until it's completely frozen.
