Creamy peanut pasta bake

This is adapted from a recipe I first made with a friend of mine in my first term at University in 1996. I can't remember where the original was from! The peanut butter adds protein and is surprisingly good with pasta.

Ingredients

  1.  Cook the pasta to taste.
  2.  While the pasta is cooking, heat the oven to 200 degrees C (400 degrees F, gas mark 6). Finely chop the onion and dice the pepper. Slice the mushrooms.
  3.  Fry the onion in some olive oil for about 10 mins until soft, then add the pepper and mushrooms and fry for about 5 mins.
  4.  Pour in the tomatoes and add the peanut butter, hot pepper sauce (if using) and basil. Season to taste and simmer until the sauce is thick and creamy.
  5.  Stir the cooked pasta into the sauce and pour into an ovenproof dish. Cook in the oven for about 30mins and serve.
