Red Pepper Pickle

I found this recipe on Kate Pugh's cookery site. It's particularly nice with curry or with veggie sausages/burgers.

Ingredients

  1.   Finely slice the pepper and onion into shortish pieces.
  2.   Put the sliced pepper and onion into a non-metallic bowl and add the lemon juice, cumin seed and black pepper (to taste). It's important to use a non-metallic bowl otherwise the lemon juice will react with it and produce a metallic taste).
  3.   Mix well and leave for at least an hour at room temperature before serving.
Serves 6
